Ok ~~ so I am totally in love with our garden this year! We planted cucumbers, tomatoes, cherry tomatoes and some yellow squash. The best producing for us this year were the tomatoes and some fresh basil! So, on that note I thought I would ShAre some yummy tidbits of information about the benefits of tomatoes and basil!
Everyone "nose" that tomatoes are full of Lycopene, the chemicAL that is responsible for turning the tomatoe red are great at helping prevent cancer, heart disease, and cataracts. they are also full of vitamin C! The tomatoes that we grew in our garden are so sweet and paired with the fresh basil they smell so fresh and yummy! We made some Bruschetta with our garden picks:
Recipe for bruschetta:
Ingredients
6 or 7 ripe tomatoes (about 1 1/2 lbs)
2 cloves garlic, minced
1 Tbsp olive oil
1 teaspoon balsamic vinegar
16 fresh basil leaves, chopped. i like a lot of basil!
Salt and freshly ground black pepper to taste
1 baguette French bread
1/4 cup olive oil
1 Chop the tomatoe into tiny diced pieces ,chop the basil, place fresh garlic into a garlic press , press or dice, then add crushed garlic to mix with a a dash of salt and pepper,vinegar.
2 Preheat oven to 450°F to toast sliced french bread.
Drizzle olive oil on sliced baguette bread and toast for six minutes minutes or until golden brown.
3 place toast on a serving platter then top with bruschetta mix right before serving. Bread will get soggy if placed on too soon!
