What is better than a fresh baked chocolate chip cookie and a glass of milk??? Well, a chocolate chip ice cream sandwich of course! Mom used to make these for us as kids and we loved them! If your pressed for time here is a short cut to make these and they taste like they are made from scratch. All you have to do is purchase a Betty Crocker Chocolate Chip cookie mix packet and some vanilla ice cream! I swear by this cookie mix I haven't tried any other brands because, it's that good.
Prepare the cookie mix according to the directions on the package, mix in a bowl and make even round scoopfuls of batter on the cookie trays. I love to use the pampered chef Large Scoop* it has a stainless steel squeeze handle that evenly proportions out batter, about 3 tablespoons. This way the cookie tops and bottoms match when you make the ice cream sandwiches.
Let the cookies cool on a cooling tray for 15 minutes. After ten minutes of the cookies cooling take your vanilla ice cream (or you can get gourmet with your flavor of ice cream)and let it soften a little bit. Next, scoop out one scoop of ice cream on to the bottom cookie and then gently press the top cookie on. You can then roll the cookies in sprinkles if you like. My kids wanted them the old fashioned way with nothing on them. Next wrap up your cookies in saran wrap or parchment paper and you can save for later or enjoy and serve them immediately!
For a party try rolling the cookies in different sprinkles/m&ms/oreo crumbles/gummy worms, use your imagination here! Serve on a glam cake plate all stacked up. Grownups and kids LOVE them!Enjoy!
