Ultimate Pumpkin Bread Crumb Cake



I love the Fall and this time of year for baking anything with pumpkin. Cool, crisp weather and the leaves changing to beautiful colors of reds and yellows is so beautiful. So, let's whip up some Ultimate Pumpkin Bread together and have your kitchen smelling yummy. My daughter requested some to take back to college so I am going to make one with chocolate chips and two plain pumpkin breads. You can add chopped walnuts to your pumpkin bread however, my family prefers no walnuts so, there you have it.
Prep time is quick only 15 minutes.

Ultimate Pumpkin Bread:
Original recipe makes 3 - 7x3 inch loaf pans

1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil -you can substitute the following for 1 cup of oil: (1 cup of applesauce)or (1/2 cup of butter and 1/4 cup of Greek yogurt)
2/3 cup water
2 cups brown sugar
2 cups all-purpose flour
1 1/2 cups of whole wheat flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over loaf before baking. I make one with crumb topping.

1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
2.In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. Add in a sprinkle of chocolate chips or chopped walnuts optional.
3.Bake for about 50 minutes in the preheated oven. Insert toothpick or knife in center to see if batter is dry if so loaves are done!

  2. Thank you Lara! It really looks much better in person I have to upgrade my cell phone (camera) on Verizon the waiting is the hardest part.
