Protein Blueberry Muffins
Welcome to my new blog design! I am so excited that I wanted to celebrate and bake something healthy and delicious on this freezing cold day. Let's warm up those bellies and have our kitchens smelling delicious. These muffins really totally rocked. They are perfect for morning breakfast or after your workout to give you some energy. The key here are the fresh blueberries, when you take a bite these little muffins are bursting with healthy flavor guaranteed to put a smile on your face,even on Captain cranky pants, he doesn't usually eat muffins. Score major points for Mommy!
1 Cup of It Works! UltimateFit Vanilla Protein Powder
1 1/2 cups of Oat Flour (you can use whole wheat, or white flour or all vanilla protein powder)
3 Tbs. of Almond Meal
2 Tbs. of Ground Flaxseed
3/4 Cup of Coconut Milk unsweetened
1/2 Cup of blueberries
2 Tbs. of water
2 Bananas
2 Tbs. coconut oil
1/4 cup of Unsweetened Applesauce
1 1/2 tsp. of cinnamon
3 tsp. of baking powder
sprinkle of sea salt
Combine all ingredients and mix well. Spray muffin tins with fat free cooking spray. Scoop batter into the muffin tin. I added a few snowflake sprinkles on some, on others we sprinkled a little coconut sugar on top. Bake at 350 for 40 minutes. Test the center with a toothpick, if it comes out clean the muffins are done . The center should be golden brown.
